Nice Manx you have there. Yes could try the smaller idle jets at home to see if it makes any difference in the way it runs.
With the idle air/fuel adjustment screws should be about a 1-1/2 turns out on the average. If your turning them out more, it means idle jets are to small.

The Empi Hpmx carbs are copies of Weber IDF and use the same jets as them. Depending on were you live you should be able to find jets for them at places that sell VW parts. Shops such as Pierce Manifolds in Gilroy, Ca sell Weber parts and jets, CB Performance in Farmersville, Ca sell Weber parts to....

What kind of Empi dual carbs do you have?
You may want to install the next step down in idle jet size.

With only one picture it not going to be easy to tell what it is. With the way the windshield is mounted to the hood, it more than likely not a Meyers Manx.

Watching the videos I can see your ride is worst then a Class 11 with the shorter wheelbase the buggy has.

Looking good. I never knew that they made aftermarket exhaust manifolds for Corvair. Are they a lot larger ID then stock. Yes the SACO hyd clutch setup works well.
